Made this amazing bread for the first time last night. I have heard some coconut flours are reacting with the aluminium in baking powder. I am so happy to hear you cocont the bread recipe. It would probably work, you may have to add some additional flavour and salt to make up for butter being omitted.

Getting ready to pop it in the oven now. I love this recipe as is. I whip the egg white to soft peak then fold it to the mixed ingredient. Mine stuck to the muffin tin.

  1. Thank you, Jody. I had to bake it a little longer but it worked well. I keep mine in an airtight container for days. I think cutting the sweetener in half is fine.

  2. Nothing could be further from the truth though. It behaves nothing like traditional wheat flour and — consequently — it took me many months of experimenting to consistently get it right. 😃
